Tofu Capsicum Salad


Tofu 250g

Capsicum 2

Tomatoes 2

Pepper powder to taste

Salt to taste

Coriander leaves 2tbsp

Red cabbage a few leaves

For Dressing

Olive oil 2tbps

Vinegar 2tbps

Garlic, crushed 1clove




  1. Chop tofu into 2 inch long and thin pieces. Cut capsicum and tomatoes lengthwise into thin pieces. Remove seeds. Chop coriander leaves.
  2. For dressing place olive oil, vinegar, crushed garlic in a small bottle with lid and shake vigorously
  3. Mix chopped tofu, capsicum, tomatoes, pepper powder and salt. Pour the dressing over the salad and toss the salad. Garnish with coriander leaves and serve on a bed of red cabbage leaves.
